Roast Cauliflower Tahini Deliciousness



Sick of boring salads that suck the life force out of you? Hush your concerns I have a salad that will warm your soul and fill your bowl.


Ingredients:

Salad:

1 head of cauliflower

2 medjool dates

rocket leaves

cucumber

cherry tomatoes

sprigs of dill


Dressing:

2 tbsp tahini

1/4 cup water

2 medjool dates

1 tbsp lemon juice or white wine vinegar

Pinch of salt


Method:

1. Break apart the cauliflower head into bite sizes pieces. Transfer to a baking tray and season well with oil, salt and pepper.... (Go wild and add some cumin and cayenne pepper if you are feeling spicey)

2. Roast cauliflower for 20-25 minutes in a 185°degree oven.

3. Blitz all of the dressing ingredients until silky smooth and delicious.

4. Prep your rocket leaves and other salad extras into a bowl.

5. Add the roasted cauliflower to your salad bowl and finally drizzle with the tahini dressing.

6. Warning: Salad has a tendency to be seriously addictive, so get ready to load up the shopping trolly with cauliflower heads.
